Does it work between the ship and home?

Yes, but by a different route, and it is worth understanding the difference.
On board, messages hop phone to phone over Bluetooth and never touch the internet. Between ship and shore that obviously cannot work — there is an ocean in the way. So a message heading home waits for a phone that has a real connection and travels with it.
In practice that means shore messages are not instant. They go when a connection exists: in port, or when somebody aboard with a data plan happens to pass close enough.
The family at home use a portal in a browser. No app to install, no charge.
Set expectations with them before you sail. "It will arrive today" is true. "It will arrive now" usually is not.
